CHEESECAKE RECIPE: PASSIONFRUIT & LIME GOATS CURD JARS
Ingredients
Biscuit crumb
300gm digestive biscuits
100gm butter, softened
1/4 caster sugar

Cheesecake mixture
400gm Philadelphia cream cheese, softened and cut into cubes
200gm goats curd or soft goats cheese
1/2 cup caster sugar
3 limes, juice and zest
3 gelatine leaves
8 passionfruit
300ml thickened cream
1/2 cup shredded coconut, toasted

Method
1. Preheat the oven to 150˚C. Process digestive biscuits till fine crumbs have just formed. Combine with the butter and sugar and press firmly onto a lined tray. Bake for approximately 30-40min at 150˚C till biscuit is golden brown and firm. Set aside to cool and roughly break up into crumbs.

2. Combine the cream cheese, goats curd, caster sugar and juice of three limes in a food processor until just smooth. Following packet instructions prepare the gelatine leaves and add to the cream cheese mixture. Process for a further 1-2 minutes. Fold in the lime zest and pulp of six passionfruit.

3. Whip the thickened cream in a large bowl until soft peaks have formed. Gently fold the whipped cream bit by bit into the cream cheese mixture until well combined.

4. Fill a quarter of the jar with biscuit crumbs. Carefully spoon or using a piping bag fill the jars with the cheesecake mixture leaving 1cm from the rim and refrigerate overnight to allow it to set.

5. Just before serving finish off with a drizzle of remaining passionfruit pulp and toasted coconut.
