DAN CHURCHILL’S (FRIGGIN’) AMAZING SALAD
With a title like this we had to find out what makes up Dan Churchill’s amazing salad! It’s the perfect dish to take your summer spread to the next level or devour mid-week when the warm nights call for easy flavour.
(FRIGGIN’) AMAZING SALAD
3 garlic cloves, finely chopped
1 tablespoon soy sauce
1 tablespoon honey
600 g boneless, skinless chicken breast, cut into 2 cm pieces
2 big handfuls of rocket
Big handful of baby spinach
6 sun-dried tomatoes, sliced
7 by 1 cm feta block, thinly sliced
1 tablespoon olive/macadamia oil
Juice of 1/2 lemon
Handful of macadamia nuts (optional)
In a large bowl, mix the garlic, soy sauce, and honey until well combined. Add the chicken and use your hands to coat it with the marinade; set aside. Marinate for a minimum of 30 minutes, but overnight is best.
In a large salad bowl, toss together the rocket, spinach, sun-dried tomatoes, and feta.
In a frying pan, heat the oil over medium to high heat. When it moves around the pan easily or starts to smoke, add the chicken and cook for 6 minutes, or until cooked through. (To test, cut through the centre of a piece, and if it is still pink, cook it longer. It is perfect if the meat is quite squishy but white in the centre.) Pull it off the heat straightaway.
Add the chicken and the lemon juice to the bowl with the rocket mixture and toss to combine. Serve as-is or topped with some macadamias, if you like.
TIP: Microwaveable rice is great in a pinch. Just microwave for 90 seconds and add a portion to your meal.
